Culinary Arts Program

Come learn the art of preparing, cooking and the presentation of food by Chef Karrian Neal , AKA Mama Bear!. This offering is designed to give participants an overall picture of what it takes to nourish our bodies, while dazzling our taste buds and keeping our kitchen in order. Making delicious whole foods based meals is easy if you start with great ingredients. Eating food that is locally and consciously sourced, is amazing for lots of reasons: supporting local farmers, tastes amazing, highest in vitamin and nutrients=best for the body, and living in rhythm with the land. Like humans, ingredients have personalities, once you understand the qualities of the ingredient and how to balance flavors, There are no limits to your creative expression. I am not interested in giving you recipes, recipes do not teach you how to cook, but I have developed some techniques that can easily start you on the path to creating elegant, body loving creations. After that all you have to do is practice and eat!

This experiential program will start on Tuesday, the 18th of July at 10am. Participants may arrive on Monday evening or by 9:00am Tuesday to allow time for set up. Course participants will begin their learning immediately while helping with the prep for the glorious meals the Yoga Feast will feature.

- The three things you can do to ensure delicious food
- Large Batch Cooking - Recipe Development, Flavor and Nutritional Balancing
- Kitchen Station and Buffet Set up - Establishing Organization, Flow and Efficiency.
- Food and Kitchen Sanitation - Work Clean, Cook Clean, Clean Nourishment
- Station Set up - "Mise En Place: Everything in its Place."
- Cross-Contamination - Food Allergies and Aversions
- Equipment Education and Identification - Knife skills etc...
- Balancing Flavors (Sweet, Sour, Salty, Bitter, Umami)
- Method-Based Cooking - Fermentation, Main Course, Soups, Beverages, Salad, and Dessert

About Karrian:

Karrian has been involved with food for the last 20 years, actively working as a Chef for the last 7 years and has been a part of Yoga Feast for the previous 4 years, providing nourishment, beauty and fuel for the teachers and participants. Her culinary skills have been honed through restaurants, retreats, celebrations, life and individuals. Working as a Chef for Sutra Restaurant, Poppy Restaurant, Bastyr Natruopathic Medicine Revival, Yoga Feast, University of Washington Greek Sysytem, and currently as a Chef Trainer/Instructor at FareStart in Seattle. Farestart is a non-profit organization that uses food as an education tool to help homeless and disadvantaged people learn skills to empower themselves into sustainability.
